Green Tea Ice Cream - Matcha Aisukuriimu
2 1/4 oz (75g) green tea powder
1/3 cup (75ml) cognac or brandy (optional)
5 cups (1 1/4 litres) fresh milk
1 cup (250ml) heavy cream
1 1/3 cups (100g) skimmed milk powder
1 3/4 cups (350g) sugar
Sweetened azuki beans, to serve (optional)
- Place the green tea powder in a bowl, add the cognac and mix well.
- Pour the fresh milk, cream, milk powder and sugar into another bowl and mix well. Transfer into a saucepan and bring to a boil over moderate heat.
Remove from the heat and allow to cool into a lukewarm temperature then add the green tea mixture and mix well.
- Chill immediately in the freezer until ice crystals start to form around the edges of the container.
Pour the mixture into a blender or food processor and blend for a few seconds to break up the crystals. Leave the mixture to freeze in a plastic container.
Serve green tea ice cream topped with sweetened azuki beans.
Makes : 5 pints (2 1/2 liters)
